Seedy Molasses Granola

That feeling when you would get excited to drink your colored cereal milk as a kid… when the molasses hits the milk from this granola it will be a wonderfully (healthy) nostalgic brekkie!

Ingredients

  • 3 c oats
  • 1 c buckwheat groats
  • ½ c pumpkin seeds
  • 1/2 c crumbled walnuts
  • Salt to taste (¼-½ tsp)
  • Cinnamon to taste (½ tsp)
  • ¼ c combination of chia and hemp seeds
  • ¼ c melted coconut oil
  • ¼ c blackstrap molasses and honey combination 
  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 300 degrees
  2. Combine oats, groats, seeds, nuts, salt, and spices in mixing bowl
  3. Drizzle oil and molasses/honey with vanilla over mix and stir to coat thoroughly (hands may be required)
  4. Spread out on greased baking sheet (grease with coconut oil)
  5. Bake in oven for 20 minutes, remove to stir, and return to oven for another 15-20 minutes
  6. Remove and let cool
  7. Add chia/hemp seeds, stir, and let cool at least 15 minutes to get crunchy!

Tips

Keep granola in a large Mason Jar to keep fresh all week. Eat with organic yogurt, nondairy milk, fresh fruit, sprinkle on smoothies, or by itself!
